HISTORY OF UMI SUSHI
Sushi is a Japanese dish that consists of cooked vinegared rice combined with other ingredients, seafood, vegetables and sometimes even tropical fruits. Raw fish (or sometimes other meat) sliced and served without rice is called sashimi. Sushi is often served with ginger, wasabi and soy sauce.
The origin of sushi lies in the preservation of fish by fermenting it with rice, which became common at the beginning of our era in Japan, where at the beginning of the seventeenth century the rice was consumed together with the fish while the fish was not yet fully fermented. As more and more Japanese could afford fresh fish, rice vinegar was added to mimic the slightly sour taste of the partially fermented rice.
Sushi started out as a street food, but thanks to the rich variety of fish in Tokyo Bay and the artisanal attitude of Japan, it has grown into a global delicacy we know today. It was in the early 1800’s in Tokyo where the current form of sushi took shape, with various types of fish, seafood, vegetables and seaweed prepared together as a small, dainty snack. At the beginning of the twentieth century, sushi started to spread throughout Japan and in the second half of the twentieth century all over the world.
